The complete menu for the Marquis de Lafayette All College Dinner is listed below:
Station 1
- VIRGINIA STYLE “BRUNSWICK STEW”
Served with homemade Johnny Cakes, Corn Bread muffins, and Biscuits
- BAKED VIRGINIA “PIT HAMS”
Basted with Brown sugar, honey, and West Indies spices, sliced and chilled,
Served with Grain mustards, horseradish cream
- BLOCKS OF CHEDDAR CHEESE
With butter crackers
- GRILLED SAUSAGES
Basted and brined in molasses and tomato sweet vinegar
Served with baby Gherkin pickles and roasted pearl onions
Station 2
- BROCCOLI, WHITE BEAN, AND ROASTED CORN SALAD
Served over butter Bibb lettuce and tossed in a Shallot and Dijon mustard dressing
- RUSTIC BREAD SALAD
Toasted bread croutons tossed with French green beans and plum tomato wedges
Sprinkled with shredded parmesan cheese
- DISPLAYS OF ROASTED AND PICKLED VEGETABLES
To include: Baby carrots, Onions, Button Mushrooms, Peppers, Celery, Olives, and Cucumbers
Station 3
- BAKED COTTAGE PIES
Filled with fried Leeks, shallots, and garlic
Covered with Duchess Potatoes and Parmesan Cheese, baked golden brown and served in skillets
- ROASTED ZUCCHINI SQUASH AND PIMENTOS
- BAKED “SEAFOOD MUDDLE”
A seafood combination of clams, sea trout, cod, and shrimp simmered in a rich tomato with carrots garlic, celery, potatoes, and fresh parsley
- “ESTOUFFADE OF BEEF”
Sirloin tips of beef braised and cooked slowly in natural gravy and vibrant spices
Garnished with onions and mushrooms
Served with rashers of pulled Artisan Breads and butter
