Tented clambakes will feature wide variety
The menu has been confirmed for the clambakes that will be enjoyed at Homecoming 11 a.m. Saturday, Oct. 20. The annual tented clambake will be held adjacent to the parking deck; drinks are BYO. Several alumni fraternity groups will have the same menu for their individual clambakes.
Menu
- Steamed clams with brown butter and crackers
- Shredded pork barbecue rubbed with spices and slow roasted, then simmered in a tangy and sweet Kansas City-style sauce, served with a potato bun with sweet relish on the side
- New England clam chowder with crackers
- Baked southern-style macaroni and cheese (a creamy mix of cheddar, Jack, and Parmesan) slow baked for a brown crust
- Grilled all-beef hot dogs on a bun; ketchup, mustard, onions, and relish
- Vegetarian burgers on whole wheat pan rolls
- Pan-fried potato and cheese pierogies fried with butter and onions; sour cream and ketchup
- Fresh field greens tossed with chervil, arugula, apples, currants, and walnuts on the side, dressed with carrot and cucumber sticks; blackberry and honey vinaigrette
- Pickled Texas cabbage freshly made with a sugar-sweet and chili-hot dressing
- Fresh seasonal apples
- Chocolate and vanilla whoopi pies
- Pumpkin cutout sugar cookies
- Chilled bottled water and soda
