Recent Sporkful episode focused on cooking fats in America over the last 150 years
Chair of engineering studies and professor Benjamin Cohen was recently interviewed on the weekly culinary podcast The Sporkful with host Dan Pashman. The episode, “Seed Oils Are the Latest Battle in the Cooking Fat Wars,” looked at battles over cooking fats in America over the last 150 years.
Cohen wrote about the origins of manufactured foods in the United States in his 2019 book Pure Adulteration: Cheating on Nature in the Age of Manufactured Food.
