Tomatoes, eggplants, fresh flowers, oh my! LaFarm, Lafayette’s own local, student- and faculty-run farm, boasted a wide range of produce available for purchase for a few Thursdays this summer at LaFarm Marquis Market.
Setting up camp on the Quad, the market attracted summer students and local Eastonians alike, all seeking top-quality produce—and no one was disappointed.
Carrots, radishes, tomatoes, fresh flowers, and green beans were just a few of the naturally grown varieties available, harvested by the farm’s largest student staff ever.
LaFarm is located about three miles north of campus in Forks Township, Pa. It serves as one of the campus’ primary sustainability initiatives and proudly produces fresh and local foods for on-campus dining halls. The farm is also incorporated into curricula and serves as a laboratory for collaborative student-faculty research. It operates on two full acres and continues to expand.
In addition to the market, LaFarm delivers weekly to Farinon and Gilbert’s, and also donates thousands of pounds of harvests to the local community.
Sarah Edmonds, farm manager, is proud to report that this the farm’s most productive year on record. She looks forward to welcoming even more student staffers to continue the market this fall.
Avid LaFarm fans have much to look forward to this upcoming season, including the production of salsas in addition to the usual fall crops.
