Billy’s Downtown Diner to replace former Perkins on Third Street

Billy Kounoupis, owner of Billy’s Downtown Diner at 10 E. Broad St. in Bethlehem, will open a second restaurant in the building that housed Perkins Restaurant and Bakery at 123 S. Third St. in Easton. Perkins closed three months ago. The new diner is expected to open in June and will serve breakfast, lunch, and dinner.

Like his successful franchise in Bethlehem, open for eight years, Billy’s Downtown Diner in Easton is expected to offer “diner food with a flair,” as Kounoupis says, at an affordable price and family-friendly atmosphere. The franchise is also expected to bring 50 new jobs to downtown Easton.

The interior of the building has been extensively renovated and is equipped with wireless internet, satellite radio, and plasma screen televisions, which Kim Kmetz, manager of the Easton Main Street Initiative, believes will help make it a select off-campus choice for students.

Kmetz anticipates that the diner’s uniqueness, affordability, and modern features will make it a destination restaurant for residents and students, and will contribute to downtown Easton’s rejuvenation.

“Billy’s diner is different from what is common in downtown Easton,” explains Kmetz. “[Billy] is known for the success of his Bethlehem restaurant, as well as using that to promote historic Bethlehem by encouraging his customers to stick around and enjoy the area. He says he has every intention of supporting Easton in the same way.”
